Anyone who knows me, knows that food = happiness. Earlier this week, I committed to my own personal #noexcusenovember which includes making healthier decisions for my body both physically and mentally. And by the way, healthy food doesn’t have to mean boring food. As I embark on this journey, I’ll share recipes and techniques that have worked… and ones that didn’t. First of all, pictured above are some of my best friends in the kitchen. I’m pretty sure you can find them in any grocery store or on Amazon. Anyways, here’s what went into this super quick meal that I adapted from Pinterest:
- 3 chicken breasts
- 2 TBS olive oil
- 4 small lemons
- 1 TBS liquid aminos
- 1 TBS minced garlic
- Veggie of your choice (I used asparagus and carrots)
- Salt & pepper
- Mrs. Dash lemon pepper seasoning
Ok, are you ready? Preheat your oven to 400*. Coat the bottom of the pan with olive oil and lay the chicken breasts in it. In a separate bowl, mix the juice from 3 lemons, the liquid aminos, and the garlic together. Pour 3/4 of the mixture over the chicken breasts and then season with salt, pepper, and lemon pepper seasoning. Slice the remaining lemon and place the slices on top of the chicken breasts. Bake for about 18-20 minutes. Remove the pan and add your veggie. Pour the remaining mixture over the added ingredients. Bake for another 10 minutes. Done.
